AbstractThe objective of this study was to experimentally analyse the drying characteristics of anchovy fish and the application of solar drying to dry the anchovy fish for its complete drying within one day. The drying characteristics of the fish was evaluated by drying the fish in a hot air oven by varying the temperature and air flow rate. The hot air oven allows air to flow in the range 80 m3/h to 200 m3/h and the temperature was varied from 50 °C to 60 °C. At temperature 50 °C; at air flow rate 80 m3/h, the drying time is 310 minutes, at air flow rate 140 m3/h, the drying time is 210 minutes and at air flow rate 200 m3/h, the drying time is 180 minutes. At temperature 55 °C, the drying time is 275 and 150 minutes for 140 m3/h and 200 m3/h respectively. At temperature 60 °C, the drying time is 225 and 150 minutes for 140 m3/h and 200 m3/h respectively Four experiments were conducted for drying the anchovy fish by a forced convection solar dryer at different loads and different airflow rates in one day. The average system drying efficiency for load 1 kg and air flow rate 130 m3/h and 190 m3/h is 5.32 % and drying time required was 5.5 h and 6 h respectively. For load 2kg and air flow rate 130 m3/h and 190 m3/h, it is 11.4%, the drying time required was 5.5 h and 7 h respectively A study was done to investigate the methods to eliminate the sticking of fish with the drying mesh tray. Both theoretical and experimental studies were done with positive result found when the fishes were dried on a non-stick mesh tray.
