Development of a supply chain management system for frozen shrimp in Thailand

AbstractThai frozen shrimp has high competition. The quality and safety of frozen shrimp product should be developed and investigated. The cost minimization of production system by the implement of supply chain concept was implemented. This research study was to overview of frozen shrimp supply chain from primary and secondary data. The cost based on the quality and traceability system by using RFID tag was tested. From survey and interview, the results revealed that the costs per Kg of shIimp production in small, medium and large farm size, which were divided by area of farm, were 110.17, 112.13 and 121.44, respectively in White shrimp. The main costs of the large farm were the operating cost and labor cost. The large farm had applied Good Agricultural Practice (GAP), Code of Conduct (Co C) and other standards for each country such as USA, EU and Japan. Most shrimp from large farm were exported. The foreign customers needed the standards to guarantee on food safety. Also the cost of Black Tiger shrimp was higher than the cost of White shrimp because Black Tiger shrimp was susceptibility to whitespot disease and the difficulty of breeding. In the other words, the comparison of capital cost in White and Black Tiger shrimp in each shrimp size, the price of Black Tiger shrimp was lower than White shrimp in the large size (30 and 40 shrimps per Kg). The large size of shrimp was difficult to survive, especially Black Tiger shrimp because it had more disease than White shrimp. Therefore, the costs of chemical, pharmaceutical and labor were higher. In contrast, the small size of White shrimp has lower price than Black Tiger Shrimp. The cost of two handling methods, which were the handling with air pumping to water and with ice, were 3.42 and 3.25 Baht per kg of shrimp. The trucks with air pumping can load about 1.2 tones, and 2 tones for trucks with ice. In term of quality, the comparison of two handling methods based on quality was found that the texture, color and sensory evaluation had difference. Shrimp with air supply have higher firmness values than shrimp with ice that means handling with air pumping has effect on the quality of texture. For color values, raw shrimp with air supply is darker than shrimp with ice. Cooked shrimp with air supply is darker of orange-red than shrimp with ice. In addition, the panelists can detect the different of five parameters in terms of color, appearance, texture, flavor and acceptability. Only the odor was not significant. All parameters were significant at the 0.05% level in statistical analysis. Moreover, the Solver program in Microsoft Excel to calculate the mInImUm cost of transportation was developed. However, the other important thing that should be considered is the quality of shrimp. The program can calculate the minimization cost but the quality is not concerned. Therefore, the minimize cost should go along with the quality. To this study, three models of frozen shrimp supply chain were selected and developed the model based on cost minimization and quality of shrimp. The first model was transported directly from farm to factory. The second model was transported from farm to broker and factory. The last one was transported from farm to broker to central market and factory. The first model gave the lowest cost of transportation and has the best quality because involved only two stakeholders. Traceability is the one of the new technology for food industry in Thailand but it is not new to the U.S. food industry. The fundamental basis for a traceability system was its ability to trace both products and activities. This requires a system capable of tracing products through farming, processing and logistic. The information was collected from farm and ship to processing plant. Microsoft Access was used in template design for inputting data and colIec data as the data base. Then Visual Basic 6.0 is used to interface between central data il Microsoft Access and RFID. The case study of traceability system for the whole chain 0 frozen shrimp was demonstrated and the output showed a good result for the system
