AbstractBlack glutinous rice, as well as its rice bran, are very rich in anthocyanins and other bioactive compounds. Anthocyanins provide the pigmentation to the rice and rice bran. Ultrasonic Assisted Extraction (UAE) was mainly utilized for extracting of bioactive compounds, in black glutinous rice. Effects of three independent variables; ethanol concentrations, amplitudes and times in the response factor such as extraction yield, total phenolic content (TPC), total flavonoid content (TFC), antioxidant activity and reducing power the bioactive compounds the black glutinous rice and also its rice bran were optimized by using response surface methodology (RSM). The best conditions for extraction from, black glutinous rice as predicted by RSM were 70% ethanol (v/v), 65% of amplitude and 5 min of extraction time. The anthocyanins content at these conditions was 58 mg of cyanindin - 3 – glucosidase /100g. In addition to, the best ultrasonic - assisted conditions for phenolic, antioxidant and reducing power were entrenched as extraction time of 5 min, 65 % of amplitude, and ethanol concentration of 70%. Total phenolic content (TPC) extract array from 17.42 – 179.42 mg GA E/ g and total flavonoid content (TFC) of 7.51 - 99.97 mg quercetin equivalent/g respectively. Furthermore, reducing power of extract was obtained 7.24 – 189.58 mg AAE/g and DPPH activity array in between 38.89 – 55.9% respectively. Additionally, the anthoc yanin content was in the range of 10.02 – 53.77 mg cyaniding - 3 - glucoside/100 g, total phenolic content (TPC) exhibited by extracts were 65.85 – 136.17 mg GAE/ g and total flavonoid content (TFC) ranged from and 0.13 – 2.59 mg quercetin equivalent/ g res pectively. Thus, the antioxidant activity DPPH was 57.84 – 80.14, and reducing power, of extract was between 38.9 – 239.94 mg AAE/ g respectively. For the extraction of resistant starch from the black glutinous rice from the extraction condition 100:400, 1 00:800 and 100:1200. The resistant starch content was shown higher in the 1:8, and the RS content was 12 g/100g. The maximum inhibition percentage shown by resistant’s starch as 28%, compared with control resistant’s starch shown glucose concentration very less.
