Assessment of the problems and challenges faced by the urban information street food vendors : a case study in Allahabad, India

AbstractThis study analyzes the contributing factors affecting the incomes, employment and livelihood of the street food vendor’s situated in Allahabad city, India. It also analyzes the major actors involved and what are their contributions in this fast food sector, how this sector has impacted the operators in terms of employment and change in income, assessment of the hygienic conditions and practices of the street food vendors. The reported results are the outcomes based primary as well as secondary data. A survey was carried out in which 30 street food vendors using a pre-structured questionnaire. In addition to analyze the Hazard and critical control at different stages of vending and presence of Salmonella and Coli form in food & water that is used by the street food vendors, secondary source of information were reviewed. For 70.3 % of the responders, vending was the only source of income and they are operating as fulltime business unit. As vending is the only source of income for majority of responders, the main enabling reason behind this are pull factors: Lack of education, not able to find salaried job, capital shortage and push factors: No Certification required and easily accessible. The profit percentage is varying significantly, the main reasons behind this was that for the vendors who were earning a higher profit were running their business from quiet long time and for them vending is the primary source of income and also their education level were higher than the other vendors The study indicated that food contamination in Allahabad City is mainly due to poor water quality and hygiene during food preparation, peeling of fruits and preparation of food long before consumption, and crowded, dusty vending location. These findings demonstrate that the food vended in Allahabad City constitute an important potential hazard to human health. The HACCP strategy has the potential to make a significant contribution in food safety which will improve food quality.
