Abstract | Mushroom preservation by curing in salt and citric acid solutions was investigated in laboratory experiments. The mushrooms were initially blanched in boiling water for 3 minutes and cooled before placing them into different concentrations of citric acid (2-6%), salt (25- 35%) and mixtures of citric acid (2-4%) and salt (6%). All samples were treated with antimicrobial agent (1000 ppm sorbic acid) and maintained at ambient temperature of 26+2°C. The effects of all curing treatments on mushroom quality and stability were evaluated for 1-month duration. These included the changes in the moisture content due to osmotic dehydration, salt uptake, citric acid uptake and pH of solution. Chemical analysis, physical examination and sensory evaluation of all treated mushrooms were carried out. The sample having good characteristics in terms of good color, taste, appearance, overall acceptability and preservability was obtained under experimental conditions of curing in a mixture of 6% of salt and 2% of citric acid solution. The results of this study showed considerable promise for improving the quality of preserved mushroom and could be used by the manufactures. Finally, the relationship models were developed for estimating salt and citric uptake in relation with theirs concentration and curing time. |
