Effects of thickness and soaking agents on the quality of cassava chips

AbstractThe objective of this study was to evaluate the effect of thickness, soaking agent and soaking time on the quality of cassava chips. The experiment was focused on the evaluation of quality of cassava chip of different thickness, soaking agent and duration of soaking. The raw material used was yellow cassava, Mentega cultivar. The quality measures for chip were moisture content, color, oil content, linear expansion and crispness. Three chip thicknesses were 0.5 mm, 1 mm and 2 mm. Soaking agent used were 0.1 % NaHS03, 0, 1 % Ca(OH)z and Leri and three durations of soakings were 10, 24 and 48 h. Thickness, combination of soaking agent and time of soaking affected the moisture content of dried cassava. NaHS03 can improve the lightness of dried cassava chip (halfproduct). Whiteness of half-product was affected by thickness and type of soaking agent too. All main factors influenced the oil content, linear expansion and crispness of the cassava chips. The best agent to produce the crispest cassava chip was NaHS03. Thickness affected the yellowness of cassava chip. The most preferred cassava chip was found to be the product from the thickness of0.5 mm, soaked in NaHS03 for 10 h.
