Abstract | Odor patterns of shrimps and cooking oil samples obtained by an electronic nose (Cyranose320) were analyzed under room conditions. The results showed that the electronic nose was able to differentiate shrimps stored at 4°C, 10°C and room temperature for different storage periods. Also it was possible to obtain the correct classification of each type of oil as demonstrated by the M-distance values greater than 5. Evaluation of oil quality after prolonged heating indicated that the electronic nose could differentiate the oils but there was still some misclassification for the rice bran oil and olive oil. Poor correlation between PV values and aroma patterns of oil exhibited that PV values determined by Lea's rapid method may not be good indicator to establish the relationships between the e-nose and quality of frying oils. It was possible for the electronic nose to distinguish the shrimp samples stored at different temperatures for various durations. Experimental determination of TVBN values of shrimp gave a clear indication of the changes in the quality of shrimp. Application of neural network modeling showed that a correlation existed between the sensor output patterns from the electronic nose and the TVBN values. Finally, the developed neural network models could be used for the estimation of shrimp quality in term of TVBN values and associated quality grades. |
