AbstractToday, Thai food retail market is very dynamic and high competition due to the expansion of foreign retailers investing capital to catch up with rising competition in the long run and diversifying strategies so as to meet demand of price-conscious consumers. The implementation of supply chain concept can be as a strategic tool for food retailers to increase competitive advantages because it can control the performance of partners in the whole chains. Interestingly, supply chain management also plays an important role in controlling food quality and safety. This research studied overview of supply chain concepts in developed and developing countries, consumer perception and buying behavior of perishable food in different countries, technology application in retailers, and food retail business in Thailand. Consequently, we can recognize the importance of supply chain concepts in food retail business in many counties. In order to have a clear understanding on supply chain management of perishable food in Thailand, an exploratory case study on Tops Supermarket was conducted, which consisted of in-depth interviewing of people knowledgeable about this industry and willing to share their experiences. Also the researcher conducted a survey with 240 respondents toward their perception on buying perishable food. From the analysis of this survey results, the researcher have come up with the opinion to align company's strategy with customer perception and requirement. Finally, from the experience of this study, some recommendations are made which might be helpful for Tops Supermarket to enhance its competitive advantages in food retail market share.
