AbstractThe application of neural networks for modeling of selected food-engineering processes was studied and compared with the traditional statistical regression techniques. The empirical modeling of food processes may often pose many challenges because of the lack of understanding of underlying relationships. Neural network approach overcomes this difficulty because when the nonlinear relationship between the input and the output is not known, it forms an internal representation of this relationship. This is achieved by minimizing the error between the desired and the actual outputs by changing some related parameters of the networks topology and retraining till the desired output is obtained. The selected processes were heating and cooling of standard shaped solids, color sorting of tomatoes and some previously reported studies in AFE program at AIT. These included the evaluation of eating qualities of cooked rice, spray drying of coconut milk, thin layer and deep bed drying of rough rice and aerodynamics of air grain mixtures in pneumatic conveying. The results for each process modeled by neural network using supervised feed forward algorithms were compared with conventional statistical modeling based on a error estimates and the degree of fit between predicted and actual values. It was found that neural network models showed a better fit than the conventional methods in all cases. The results of this study indicated that neural network network approach could be used effectively in the food industry for economic and better control of the processes.
