AbstractBlack tiger shrimp (Peneaus monodon) waste consisting of heads and shells were fermented under different conditions. The various conditions tested were the amount of acid, kinds of acid, addition of protease enzyme, addition or non-addition of Lac to bacillus plant arum 541 (LAB) culture to extract its protein and minerals. The amount of protein extracted was greatest for treatments with no LAB and no acid added but this led to early spoilage of the shrimp waste. The second best was from the treatments containing LAB and glucose only. Lowest protein extraction was observed from treatments containing acid, LAB and glucose. LAB and enzyme in combination resulted in greater protein reduction than when either of the two was used separately. Mineral extraction was the greatest from treatments containing LAB, glucose and acetic acid. Acetic acid turned out to be the best acidulant among the acids used namely, citric, lactic and hydrochloric. Increase in protein and mineral extraction was observed when fermentation time was extended from 24 to 48 hours for treatments containing acid (acetic and citric), glucose and LAB. However, waste treated with the same acids but with no LAB added, showed more protein remaining in the waste after 48 hours as compared to 24 hours.
