AbstractA study of syrup production from pineapple wastes by ultrafiltration and ion exchange process was conducted. Types of pectinase enzyme were investigated t o improve flux rate of ultrafiltration process (UF ) . Performance of various resin types of ion exchanger a nd effects of processing parameters on generation and regeneration rate were studied. In enzyme pretreatment, Pectinex Ultra SP-L at dosage of 100 ppm gave the highest flux rate at 88.4 l/m2/hr in UF process by using tubular membrane with molecular weight cut off 18,000 Da l tons. In ion exchange process, selection of resin was conducted at f l ow rate of 30 ml /min which contact time was 10 min and bed volume of resin was 300 ml . Three types of styrene resin of each ion exchanger were compared. Alimentech was selected as suitable cation resin which gave operation volume of 6750 ml a nd regeneration volume of 2 100 ml. For a n ion resin , Dowex 66 was chosen for suitable type due to its operation and regeneration of 1800 ml. The investigation of processing parameters was studied on Dowex resin for manufacturer feasibility. Th e operating flow rate for ion exchanger was optimized at 2 0 ml / min for maximum yield. In regeneration of cation resin, 140 0 ml of 5% HCl solution was required at f l ow rate of 10 ml/min, whereas 1800 ml of 496 NaOH solution was needed for anion resin at 30 ml/min. The concentrated pineapple syrup which composes of fructose, glucose and sucrose is much clear, neutral and trace amount of ions still remains.
