AbstractIn this study, thin layer drying characteristics of Thai peanuts (variety Tainan-9) were investigated. The drying conditions included dry bulb temperature ranging from 36 to 55°C, relative humidity ranging from 37 to 81%, initial moisture content of peanut pods ranging from 22 to 104 % dry basis, and air velocity of 0.2 m/s. Several equations were developed based on regression analysis to represent the drying characteristics of peanuts adequately. Comparison of various thin layer equations revealed that two- term exponential equation provided a good fit for peanuts with initial moisture content more than 55 % dry basis whereas the modified exponential equation gave better fit for peanuts with moisture content below 55 % dry basis. A thin layer drying equation was also developed on the basis of transient conditions of the input air in the form of a simple exponential model. The moisture contents estimated from this equation were higher than t he experimental values. These differences were perhaps due to the error in the measurement of wet-bulb temperatures in between the thin layers, and could be reduced using a constant factor determined by the comparison of experimental and estimated moisture contents. The effect of layer thickness on the thin layer drying equation development was also investigated. The results showed that a layer thickness up to 7. 5 cm did not affect the values of the regression coefficients in thin layer drying equation.
