AbstractThe extended time required for soaking and cooking the mungbean has resulted inlow urban consumption. Instant precooked bean powder could reduce the soaking and cooking requirement. This study tested the suitability of drum drying technology to produce flakes from mungbean slurry. A drum drier was designed, developed and fabricated. Three factors i.e. drum speed of 2.0 rpm, 2.4 rpm, 3.0 rpm, 3.3 rpm, drum surface temperatures of 150 ·c, 160 ·c, 170 ·c, and starch contents of 3 %, 6 %, 9 % were used with the mungbean slurry to evaluate the production rate, reabsorption capacity, color and browning, and moisture content of the mungbean flake. The three factors significantly affected the moisture content of the product. The temperature did not affect the production rate significantly. The reabsorption characteristics of the reconstituted flakes were significantly affected by the temperature of the drum and the starch content of the mungbean slurry. The starch content affected the color change of the product significantly. Drum speed and angle of knife were used to determine the best operating condition for producing a product of high bulk density. The best condition found was at a drum speed of 3.3 rpm and a blade angle of 35 degrees • The results indicated that the use of a drum dryer .for dehydrating mungbean slurry is applicable but further testing of different slurry compositions is necessary.
