Abstract | Drying characteristics of peanuts in forced air oven at 40°C,60°C and 80°C ; batch type rotary drier at 110°C,130°C and 1 50° C were investigated .Moisture removal could be represented by simple exponential mod el. Tempering improved the quality of peanut dried by conduction heating. The effect of convection and conduction drying was related with the quality parameters s u c has breakage; shriveled; weight/seed ; extra large kernels; flavor and germination . Experiments results revealed that peanut dried in forced air oven was superior than peanut dried in batch type rotary drier. In this present study , a rotary conduction drier using sand as heating media was designed and developed. The peanut was moved inside t he drier by continuous helical fins and mixed with heated sand . Drying time was reduced by increasing the rotation speed. Feasibility of drying high moisture peanut using conduction heating with and without sand was investigated. Results showed conducti on drying using sand as heating media increased t e drying rate and quality of peanut than conduction drying using batch type rotary drier. |
