Volumetric changes in rice kernels due to moisture desorption and adsorption

AbstractThe quantification of volume change during moisture adsorption and desorption in rice kernels is essential for ascertaining the reasons for low head rice yield and/or crack development. In this study three forms of rice grain, namely rough, brown and milled rice were considered for monitoring the change in t heir volume due to moisture and temperature. The volume measurements due to moisture changes in rice were based on the water displacement method, air comparison pycnometer and a commercial pycnometer. It was necessary to construct special dilatometers for the measurement of a very small change in volume of rice kernels due to temperature change. In addition, the coefficients of linear hygroscopic expansion were determined by measuring the linear changes in dimensions of the various grain types at different moisture contents both under adsorption and desorption cycles. The change in volume of rough rice with moisture content was best related by a quadratic equation whereas brown and milled rice followed linear relationships. The coefficient of linear hygroscopic expansion of thickness was higher than that of length and width for all forms of rice grain considered in this study. The coefficient of linear and cubical hygroscopic expansion of brown rice was higher than that of rough and milled rice. However, the coefficient of cubical thermal expansion of rough and brown rice were lower than that of milled rice. It was shown that t he results of this study could be used for estimating the volume changes in rough rice with exposure time during moisture adsorption in conjunction with the previous findings.
