Protein enrichment of cassava by solid-substrate fermentation

AbstractA low technology method to enrich the protein content of cassava to be used as animal feed was developed by using Solid substrate fermentation techniques. Different percentages of rice bran or soybeans, i.e. 5%. 10% and 15% was used as additive to pure cassava. Different ratios of nitrogen composing of ammonium sulfate and urea of 1: 1, 2: 1 and 2: 2 were used in combination with pure cassava or pure cassava mixed with the different rice bran or soybean percentages to evaluate protein enrichment . Physical and chemical changes in the medium during fermentation were also investigated. Steamed crushed cassava was dried to a moisture content of 35 - 40%, mixed with water containing the inoculum (Aspergillus Niger) and 1: 1 total nitrogen. The mixture was fermented for 40 hrs at 35 C and 90 - 95% relative humidity and produced a maximum range of 14 - 16% fungal protein yield in pure cassava. Addition of 10% rice bran or soybeans produced optimum protein contents of 18. 8% and 17. 7% after 33 hrs. Pure cassava alone as a substrate produced the highest protein enrichment taking into account the efficiency of fungal protein production. The phase of rapid protein production was accompanied by an increase in pH and moisture and a corresponding decrease in starch content and substrate weight . The farm- technique yielded higher protein enrichment, i.e. 23% total protein in pure cassava, 21% in rice bran addition and 21% in soybean addition, due to proper ventilation and a relative humidity maintained between 95-99% in the fermenter.
