Abstract | A village level post-harvest handling system to help overcome the problems of keeping and handling excess peas in the pea growing district of Thailand is discussed in this study. The system includes the design, construction and testing of a simple vining machine and an inclined shaker for separation. Drying was proposed as a method to store the excess production under village level. The drying characteristics of fresh peas was tested under different pretreatments and drying temperatures. The vining machine tests were conducted by varying the vining bar speed and concave clearance from 160 to 200 rpm and 5 to 11 mm respectively. The best performance in terms of capacity, efficiency and minimum damage was achieved at 200 rpm and concave clearance of 7 mm where the vining capacity, efficiency and damage was 3.8 kg/hr, 99.3% and 1.9% respectively . The tests conducted on the inclination of the shaker from 15 to 25 degrees indicated best performance of 97% separation at 20 de - grees. The vined peas were pretreated by different blanching methods prior to drying in a single layer under three temperatures of 50°c, 60°c and 70°c. The drying data was fitted to an exponential drying model which gave two empirical drying parameters namely the empirical drying constant and empirical drying exponent. Quality evaluation by chlorophyll content, physical properties and sensory tests showed best quality for peas pretreated by blanching with chemicals and dried at S0°c. |
