AbstractNon enzymatic screen printed carbon electrodes have found their application in the monitoring of glucose in urine and blood samples due to its low cost, sensitivity and selectivity. However, its application in this study was in real time monitoring of glucose released from the hydrolysis of native, acetylated modified and thermally treated tapioca starch using alpha amylase subjected to temperatures of 400C and 500C, pH 5.0 and 7.0, and reaction time of 0 - 60 min with the kinetics modelling of the digestogram. The results of the kinetics of the electrooxidation of glucose at the temperature of 40oC, pH 5.0 and 60 min showed the thermally treated tapioca starch with glucose concentration of 4.87 mM, native tapioca starch, 3.40 mM and acetylated modified tapioca starch 0.93 mM respectively. Also, the kinetics modelling of the digestogram revealed that both the first order kinetic and Chapman Richard’s function models had good predictions of the hydrolysis process, however, the Chapman model had a better prediction than the first order kinetic model.
