Abstract | The study aimed to investigate the food safety practices (HACCP and ISO 22000) and traceability systems in the milk processing in Ahmedabad, Gujarat, India, focused on management practices of food safety systems. The researcher randomly surveyed 67 milk processing plants; only 48 managers participated in the survey. Research conducted through structured questionnaire based on food safety management practices (ISO 22000, HACCP and prerequisites programs, GMP and SSOP), traceability systems and demographic information. The study indicated inadequate use of food safety systems GMP (45.8%), ISO 22000 (43.8%) and HACCP only (22.9%). This study also included identification of barriers and benefits of food safety implementation (ISO 22000 and HACCP). Barriers indicated lack of government support (factor loading :- .859) and lack of knowledge (factor loading :-.823). While, benefits indicated increase in product quality (factor loading - .804) and comply with regulatory requirements (factor loading :-.785). The identified barriers resulted in inadequate practice of food safety practices. Prerequisites programs in the milk processing plants were fairly managed, over 82.9% had proper designed effluent treatment plant within their processing plants. The least (43.8%) had written sanitation standard operation procedure for cleaning and disinfectants. Employee indicated to have more knowledge on use of GMP (33.3%) than ISO 22000 (29.2%) and HACCP (18.8%). This knowledge was measured by frequency of training results, which indicated inadequacy of twice per year almost (12.5%) and every three months (8.3%). The study indicated inadequate use of traceability system. The findings revealed that only 39.7% had implemented traceability system in their plants, the rest (60.3%) was not aware of the traceability system and its advantages. Limitation in implementation was found to be lack of government support (factor loading :- .872), lack of knowledge (factor loading :- .832) and less benefits received by company and cost associated with its implementation (factor loading :- .857). Milk processing plants need and excellent food safety system and reliable traceability to ensure that consumers are well protected from consuming unsafe food. |
