AbstractAn apparatus was developed to measure the ERR of rough rice, based on a dynamic method. The method involved the measurement of water vapor pressure exerted by rough rice samples of known moisture content and the saturation water vapor pressure at a given temperature. The equilibrium relative humidity values for rough rice samples in the test apparatus were determined to be in the range of 6.1 to 99.3 percent corresponding to the moisture content and temperature range of 6 to 37 percent dry basis and 15 to 45 °c, respectively. The experimental EMC data could be represented by usual sigmoid shape isotherms. Four EMC equations, namely Chung-Pfost equation, Strohman-Yoerger equation, modified Strohman-Yoerger equation and a proposed two constant equation represented the experimental data satisfactorily. However, the two constant equation: RH =EXP[- 35.912 /t EXP (- 0.194156 M) ] appeared to be the best statistically and because of its simplicity,
