AbstractIn this study the mechanical properties of paddy and its resistance to breakage was determined and successfully related to the milling quality of paddy. Fresh paddy at a moisture content of 24% W.B. was collected from the field for this study. The paddy was divided into three groups and dried to moisture contents of 12,14 and 16% W.B. respectively, using the following drying conditions. i . In the sun ii. In the shade iii. By forcing air at atmospheric temperature iv. By forcing heated air at 40,50,60 and 7o0c The mechanical properties of dried paddy samples were determined using a uniaxial compression testing machine. The specific rate of breakage was determined by means of a small. laboratory hammer-mill. A simple drop test apparatus was also used to evaluate the breakage strength of paddy kernals. The milling yield of identical paddy samples was evaluated using standard laboratory milling equipment. The experimental results obtained for three different ways of drying under natural conditions showed that the forced air drying method has priority over the shade and sun drying methods, in the sense that it results in hard paddy kernals and an increased head rice yield. Among the different mechanical properties determined, the elasticity modulus has shown a very strong correlation with the milling quality of paddy.
