AbstractMoisture diffusivity of bulk paddy was experimentally determined by constant diffusivity method and by analyzing the moisture profiles obtained after drying the product for two known times. Experimental test conditions consisted of various combinations of four temperatures four relative humidifies, varying in the range of 28.8 to 51. 9°C and 35.0 to 81.0 percent, respectively. The diffusivity values were found to be affected by the temperature and relative humidity of the surrounding air. In the case of moisture pro file analysis, the diffusivity values were found to be depending upon the depth of grain and as well as the time. Comparison of average diffusivity values determined by two methods showed that constant diffusivity method gives lower values than moisture profile analysis method.
